Spring is Here


It was a gorgeous weekend here in NC this weekend and all I wanted to do was sit on the deck and enjoy an adult beverage with my hubby. Yesterday morning when I woke up, I was trying to figure out what I wanted to make for dinner. I knew I wanted something that was light and something that I could enjoy with a nice glass of red wine. So what did I come up with? I decided on putting together an antipasto tray. My husband loves meals where I put together a really good meat and cheese tray. I guess an antipasto platter is sort of the Italian version of a meat and cheese tray. For our antipasto we picked up a delicious ball of fresh mozzarella, some thinly sliced provolone cheese, sopressetta, pepperoni, Italian flat bread, and various olive salads. I then marinated red onions and asparagus in balsamic vinegar and olive oil and threw that on the grill. Hubby and I opened up a lovely bottle of red wine and enjoyed our nice spring supper on the deck. It was the perfect ending to a beautiful spring weekend.
