We returned to the Farmer's Market today and glory be if I didn't stumble across a deal I couldn't pass up at the strawberry stand. A one gallon bucket for just a mere $7. What was a girl to do but of course buy a bucket of the juiciest, sweetest strawberries you've ever tasted. So what do you do with a gallon of strawberries you might ask. You come up with tons of strawberry recipes of course. The first up to bat is a scrumptious treat that I call my Strawberry Napoleon. It was absolutely decadent and glorious to eat. I do believe I devoured mine in a mere minutes. It was also one of the easiest desserts to make. It would be the perfect finish to a romantic meal with your sweetie.
Strawberry Napoleon
1 cup strawberries, hulled and sliced
2-3 tablespoons white sugar
1/2 cup whipping cream
1/8 cup powdered sugar
1 teaspoon vanilla
1 rectangle frozen prepacked puff pastry cut into squares
chocolate ganache (recipe to follow)
powdered sugar for sprinkling
Preheat oven to 350 degrees.
Mix strawberries and white sugar together and set aside for 30-60 minutes.
Place puff pastry squares on lightly greased cookie sheet and bake for 10-15 minutes until lightly brown on top and puffed up slightly. Let cool.
Whip cream with powdered sugar and vanilla until stiff peaks form. Cut each square open and set aside. Take the bottoms of each and spoon a small portion of cream into each. Now top the cream with a few strawberries and top with another square of pastry. Repeat with more cream and strawberries and top with a square that has been dipped in chocolate ganache. Sprinkle with powered sugar and top with a sliced strawberry.
Chocolate Ganache
1/2 cup heavy cream
8 ounces good semi-sweet chocolate chips
1 teaspoon instant coffee granules
For the ganache, cook the heavy cream, chocolate chips, and instant coffee in the top of a double boiler over simmering water until smooth and warm, stirring occasionally.
