My Best Meatballs Ever

So I'm always trying to find the recipe for the perfect meatball. Should I use turkey or ground beef? Fresh breadcrumbs or dried? Fry them or bake them in the oven? Well this weekend, I think I found my favorite recipe. Since hubby was still out of town. I took the opportunity to make spaghetti & meatballs. It's a favorite of mine and my daughters and with hubby gone I knew I wouldn't get any arguments. I packed up the kids and we headed out to the market. We picked up half a pound of ground beef, fresh Italian parsley, freshly grated Parmesean cheese and the ingredients to make our favorite milkshakes. I decided to bake the meatballs in the oven because I just like how tender they get in the oven. I know some people like the crispiness you get from frying but it's all a personal choice. These really were some of the best meatballs I've ever made.

Spaghetti & Meatballs

1 large can crushed tomatoes w/basil
1 medium yellow onion, chopped
2 cloves garlic, crushed
3 tablespoons extra virgin olive oil
1 teaspoon dried oregano
salt & pepper, pinch sugar, splash of red wine vinegar.

half pound ground beef
1 clove garlic, crush
1 egg, beaten
1/4 cup fresh breadcrumbs (about 2 slices)
1/4 cup fresh grated Parmesean cheese
salt & pepper
1 tablespoon fresh parsley

Preheat oven to 350. In a dutch oven, heat olive oil and cook the onions and 2 cloves crushed garlic together. Add tomatoes, oregano, salt, pepper, a little bit of sugar and a splash of red wine vinegar. Let mixture simmer on medium low heat for about 20 minutes.

To make meatballs, add all igredients to beaten eggs except meat. Once incorporated, add the ground beef and mix with your hands. Using a cookie dough scoop, form into balls and place on cookie sheet. Bake at 350 for 15 to 20
minutes.

Mix spaghetti with the sauce and top with meatballs, fresh parsley and more cheese.



For an after dinner treat, I made chocolate sandwich cookie milkshakes. So yummo.



Take about 4 scoops light vanilla ice cream, 5 chocolate sandwich cookies and about 1/2 cup milk. Mix them all up in the blender and serve with whipped cream.
