Leftovers, what to do

So yesterday, I posted about my tasty empanandas that I made over the weekend and I mentioned how the meat mixture yielded a lot and would leave leftovers. What do you do with that leftover meat you might ask? Well, there are a lot of options you can choose from. I went with a taco salad with a delicious salsa ranch but you could also turn this mixture into tacos, nachos, quesadillas or add a little tomato sauce and make a Mexican sloppy joe. All yummy options that are easy to fix and kid friendly too. For my salad, I just re-heated the meat then I chopped up some tomato and romaine lettuce. I shredded up a little pepper jack cheese and crushed up a few tortilla chips. I tossed all that together with the meat mixture and voila, an easy and scrumptious taco salad made in just under 15 minutes. Next I took about 1/2 cup of ranch with a couple tablespoons of a jarred salsa, mixed it together and added that to my salad. It was yummy for sure and hubby even declared it was the best taco salad he's ever had. What a great way to get rid of leftovers without feeling like you're eating the same thing twice.
