Make Your Own Takeout is Back

Awhile I ago, I started a series of blog posts titled "Make Your Own Takeout". Well I'm bringing that series back today. With the price of everything on the rise these days, I've realized that it just isn't affordable to eat out a lot. I'm trying to recreate my favorite restaurants meals at home. My daughter loves Jersey Mike's subs. Every time we ask her what she wants for dinner or lunch, she says "Jersey Mike's please". Yesterday I decided I was going to make our favorite sandwiches at home. Pretty simple really. I usually have most of the things you need to make a good sandwich in my fridge anyway. All I had to run to the store for was thinly sliced cheese, really good roast beef and some sub rolls. This is a really fun and budget & family friendly meal. For my sandwich, I wanted a side of onion rings but I wanted a little healthier version. I turned to Cooking Light for a yummy and lower fat version. They were the perfect side to my sub!!!

Club Sub Supreme
Roast Beef
Thinly Sliced Provolone Cheese
Sliced Ham Or Sliced Turkey
3 Bacon Slices
Shredded Lettuce
Sliced Tomato
Pickle Slices
Banana Peppers
Mayo or Mustard
Oregano
Salt, Pepper
Sub Roll
oil, vinegar

Slice roll and top bottom half with beef, ham, cheese, bacon,tomato & lettuce. Drizzle with oil & vinegar, oregano and salt & pepper. On top part of roll, slather with mayo or mustard and top with pickles and banana peppers.




Onion Rings adapted from Cooking Light Magazine

Ingredients

* 2 large onions, peeled (about 1 1/2 pounds)
* 2/3 cup all-purpose flour
* 1/2 teaspoon salt
* 1/4 teaspoon paprika
* 1/4 teaspoon freshly ground black pepper
* 1/3 cup flat beer
* 1 large egg white, lightly beaten
* 1 1/2 tablespoons vegetable oil, divided
* Cooking spray
* 1/4 cup ketchup

Preparation

Preheat oven to 400°.

Cut the onion crosswise into 3/4-inch-thick slices, and separate into rings. Use 16 of the largest rings; reserve remaining onion for another use. Lightly spoon flour into a dry measuring cup; level with a knife. Combine flour, salt, paprika, and pepper in a medium bowl. Stir in beer and egg white (batter will be thick). Heat 1 1/2 teaspoons oil in a large nonstick skillet over medium-high heat. Dip 5 onion rings in batter, letting excess drip off. Add onion rings to pan; cook for 2 minutes on each side or until golden. Place the onion rings on a jelly-roll pan. Repeat procedure of dipping onion rings in batter and cooking in remaining oil, ending with 6 rings. Coat the onion rings with cooking spray. Bake at 400° for 10 minutes or until crisp. Serve rings with ketchup.
